Because no island vacation is complete without a delicious cocktail!


There’s an image that comes to all of our minds when we think of a Caribbean vacation and it usually goes a little something like this: 


Bright sunshine, palm trees swaying in the warm breeze, gentle ripples from turquoise water waves, potentially a hammock, and definitely, a colorful cocktail with a fruity garnish in hand!


When you think of that cocktail, it’s very often a Pina Colada that springs to mind (all those coconuts and all that rum!), but what about all the other options you could savor? Ray Caye has an extensive cocktail list that is sure to make your mouth water. In fact, it’s so good, you might need to extend your stay, or just book a return trip, to make sure you get to try everything! Here’s just a selection of things you can enjoy while you’re living your best life on Ray Caye…

For the coconut lovers… start with our creamy Tipsy Coco; delicious coconut rum is joined by coconut cream and coconut flakes before being finished with coconut water and a splash of lime. It’s the perfect treat to enjoy when you’re on island time! Next up, enjoy the delicious color of our Caribbean Sea in a glass with the Blue Morpho – named after the beautiful turquoise blue butterflies you can see in Belize - this one is a mix of coconut rum, tropical pineapple and coconut cream with… of course, blue curacao! If you’re a lover of frozen drinks, how can you possibly resist a Frozen Coconut Mojito? Blended coconut rum and light rum with coconut cream, lime juice and mint leaves – we challenge you to have just one! Finally, for those wanting something refreshingly light, the Coco Pine Cooler is a sure-fire winner; coconut and light rum with pineapple and fresh limeade – perfect after a day of exploring!


If you’re craving some Belizean rum… begin your cocktail journey with the aptly-named Ray Caye Rum Runner. The Rum Runner is perhaps one of the most famous Caribbean cocktails but ours is extra special; Belizean dark and light rum is blended with local craboo liqueur (a delicious yellow fruit much beloved in Belize), then topped with pineapple and orange juice and served with a splash of grenadine. We’ll warn you now that it’s almost impossible to have less than two of these, and you usually don’t realize how strong they are till you’re finished, but… it’s always worth it! For the spice lovers, Hurricane Iris proves a surprising friend! Belizean spiced and coconut rum are mixed with orange and pineapple before being topped with deliciously dark Myers Rum.


Next up, turn your taste buds to a fruity wonderland. Watermelon Burst will have you tasting the tropics with its blend of light and coconut rum, watermelon liqueur, lime juice and fresh watermelon juice. Silk Caye Sunrise is surely the drink of choice after a day spent on the Silk Cayes; tequila and triple sec paired with orange and pineapple juice and a splash of grenadine. Then, no menu would be complete without the taste of local mango… introducing the Mango Tango; vodka, peach schnapps, fresh mango mix and coconut cream are served with a splash of orange juice.

Finally, let’s talk about chocolate. We grow it, and we know it… and we know how well it pairs with our local rums! Fancy a Chocolate Girl? Dark rum, Kahlua, delicious ‘hazelnutty’ Frangelico are paired with coconut cream, milk and chocolate – it’s the perfect creamy after-dinner drink! Other dessert-in-a-glass options include the ever-famous Funky Monkey; fresh banana, Kahlua and aged rum blended with coconut cream and chocolate syrup. Or turn it into a Dirty Banana by adding Baileys and replacing the aged rum with spiced local rum. Both are absolute winners!

In 2019 Hatchet Caye changed its name to Ray Caye. Because of this, some of the older blog posts will refer to Hatchet Caye and the newer ones will refer to Ray Caye. Either way, they are the same private island you have come to love.
